Chat Blanc Vineyard

Une histoire de famille chat

Behind the name Domaine du Chat Blanc there is the Chat-al family.

…not forgetting Bonbon, our beloved four-legged mascot!

Our Story

Our story begins in London, where we lived for fourteen years following a job relocation. London is a city that enjoys global cultural and economic reach. Our little family fell under the spell of this vibrant capital. But after a few years, we started missing our beloved homeland too much. Above all—it must be admitted—its fine food and good wines.

Wine is a true passion for us, and we’ve always cherished the dream of running a small vineyard in Provence.

The vineyard enjoys an exceptional microclimate, with abundant sunshine, dry conditions and the cooling Mistral wind, which helps keep the vines naturally healthy and protected.

We soon set to work restoring the farmhouse, which had fallen into near ruin. Over the next three years, working alongside skilled local craftspeople, we carefully brought this beautiful old Provençal home back to life while preserving its original character and soul.

OUR VALUES

Working in harmony with nature lies at the heart of everything we do. Throughout the vineyard, we favour sustainable practices that respect both the vines and the land around them. Rather than using chemical weedkillers, we work the soil mechanically, helping to preserve its natural balance and biodiversity.

When it comes to fertilizing our vines, we avoid synthetic fertilisers and instead use natural organic amendments and cover crops, helping to enrich the soil while preserving its natural balance and vitality.

OUR COMMITMENTS

As harvest approaches, we regularly taste the grapes and wait patiently for them to reach their ideal ripeness. Once the moment is right, we harvest entirely by hand in the cool of the early morning, helping to preserve the freshness, aromas and quality of the fruit.

Our approach in the cellar follows the same philosophy. We use gentle, organic winemaking methods and keep interventions to a minimum throughout vinification and ageing, allowing the fruit and the character of our terroir to express themselves as naturally and authentically as possible.

The only exception is a minimal addition of sulphur, used to ensure the wine remains stable and protected. Even then, we use just 20% of the maximum amount permitted under organic winemaking standards.

The 'terroir'

Recognised as a UNESCO Biosphere Reserve since 1990, Mont Ventoux provides an extraordinary natural setting for our vineyards, where generations of winegrowing have shaped a landscape deeply rooted in the region’s nature, history and cultural heritage.

Ideally situated between Mont Ventoux and the Monts de Vaucluse, Domaine du Chat Blanc lies within a remarkably well-preserved landscape, rich in biodiversity. Our vineyard enjoys a distinctive microclimate, with local winds bringing welcome freshness to the vines and helping us craft wines with elegance, freshness and balance.

OUR MASCOT

Can you guess who inspired the name and logo of Domaine du Chat Blanc?

At home, she is very much the one in charge! Full of personality and impossible to ignore, she shares in all our happiest moments, stays close through the difficult ones, and has become a much-loved member of the family. With all the charm, character and authenticity of a true Provençal cat, she was the natural inspiration for the name and spirit of Domaine du Chat Blanc.

It was only fitting that Bonbon should become the beloved mascot of our vineyard!

And so, inspired by Bonbon, Domaine du Chat Blanc was born.

Our wines

AOC Ventoux

Bien Nez

Bien Nez is a vibrant, fruit-forward red, bursting with freshness and made for pure enjoyment with every sip.

Made predominantly from our young Grenache vines, this cuvée is produced with carefully controlled yields of 35 hl/ha, allowing the grapes to develop beautifully concentrated aromas and flavours.

Hand-harvested at perfect ripeness, the grapes are carefully vinified to gently extract soft, rounded tannins, giving the wine an elegant and refined structure. The result is a beautifully balanced, generous red, bursting with fresh red-fruit flavours.

Bright and crystal-clear with a vibrant ruby hue, Bien Nez opens with a fresh, aromatic bouquet of red berries.

On the palate, soft, rounded tannins complement generous flavours of ripe cherry and blackcurrant, creating a smooth and beautifully balanced wine.

Perfect as an aperitif with a platter of charcuterie or Provençal-style grilled vegetables, Bien Nez also pairs beautifully with herb-roasted chicken or a firm, flavourful cheese such as Saint-Nectaire. Above all, it is a wonderfully versatile wine, equally at home at the table and easy to enjoy throughout a meal.

Best served slightly chilled, at around 14°C (57°F).

Nouveau Nez

A bright, elegant rosé with a light, food-friendly character, bursting with fresh aromas of peach and citrus.

Made exclusively from our young Grenache vines, with yields limited to 40 hl/ha to ensure beautifully expressive, high-quality fruit.

Harvested at night to preserve the grapes’ delicate aromas and freshness, then vinified much like a white wine, with direct pressing followed by cold settling to clarify the juice before fermentation.

On the palate, a lively touch of acidity brings beautiful freshness, followed by a smooth, rounded finish.

Cuvée Première

An elegant, fruit-driven red with beautiful concentration and structure.

Crafted from carefully selected Grenache and Syrah vines over 60 years old, this cuvée benefits from naturally low yields, producing intensely concentrated, characterful fruit.

Hand-harvested at peak ripeness, the grapes are vinified with meticulous care and precision. The result is a beautifully balanced wine, with velvety tannins and a silky structure that express the depth and character of its terroir.

Deep ruby red with violet highlights, this wine reveals an expressive bouquet of dark fruits and subtle sweet spices.

Generous and beautifully balanced on the palate, with rich notes of blackberry and blackcurrant, lifted by a touch of pepper and followed by a long, lingering finish.

A wonderful match for red meats, lamb and duck, as well as rich, slow-cooked dishes enhanced with truffle. It also pairs beautifully with mature hard cheeses.

Best served at 15–17°C (59–63°F).
