ORGANIC WINEMAKING AT DOMAINE DU CHAT BLANC
Faire un vin bio le plus naturel possible
After ensuring the cultivation of a beautiful fruit as naturally as possible, we regularly taste the grapes and wait for full maturity before harvesting by hand, very early in the morning to avoid oxidation.
Gentle winemaking is also organic with a constant desire to limit inputs throughout the winemaking and aging process, in order to make the most natural wine possible and promote the expression of the terroir. The only concession is a minimum intake of sulfur in order to guarantee good hygiene and the stability of the wine, with only 20% of the quantity authorized in organic farming.

A total success!
Our organic “Cuvée Première” red wine is a total success, made from our old vines (50% Grenache and 50% Syrah) producing a concentrated and fruity juice expressing the richness of its terroir.
Its color is a beautiful garnet, it has aromas of black fruits and notes of sweet spices.
The palate is round, structured with melted tannins and good length.
It can be served as an aperitif as well as with cold meats, grilled meat or cheese.

A real novelty!
Our organic “Nouveau Nez” rosé wine is a real novelty, made from our young vines (100% Grenache) producing a magnificent juice full of freshness.
Harvested at night in order to capture the volatile aromas in the heat, it is the result of direct pressing upon arrival in the cellar which gives it its beautiful luminous color.
When tasting, we feel its aromas of vine peach, with a very fresh citrus mouthfeel with good length.
It is very well balanced between acidity, sweetness and alcohol (at 12.5 degrees).
It is also served as an aperitif, with seafood, fish, veal in cream, white meats and cheeses. It will be a must-have for your spring and summer barbecues, but will also accompany you throughout fall and winter thanks to its citrus notes.

A red wine full of freshness!
Our new organic red wine vintage “Bien Nez” is a predominantly Grenache vintage, from our young vines producing a magnificent juice full of freshness.
Harvested at full maturity, it is traditionally vinified as red.
When tasting, we appreciate its ruby color and its pretty aromas of fresh fruit. On the palate, very present notes of red fruits always with a nice length.
It is very well balanced between very round and well-blended tannins, acidity, sweetness and alcohol.
It can be used for all occasions, as an aperitif, with grilled meats or just for pleasure!
It will also be a must-have for your spring and summer barbecues, but will also accompany you all year round.
